Ingredients
- Pasta - 1 lb box
- Coconut milk - 1 15 oz can
- Basil - ¼ cup (packed)
- Onion - 1
- Garlic - 3 cloves
- Broccoli - 2 heads
- Pepper - to taste
Cookware
- Blender - 1
- Large pot - 1
- Fying pan - 1
Instructions
- Start boiling water for pasta in large pot, add pasta when boiling.
- Pick/wash basil, dice onions, mince garlic, and chop broccoli.
- Blend coconut milk and basil.
- Saute onion in frying pan on medium high heat for a few minutes.
- Add garlic and broccoli to frying pan, saute for a few more minutes.
- Add contents of blender to frying pan and cook down for a few minutes.
- Strain pasta and toss to coat in frying pan.
