Ingredients
- Pasta - 1 lb box
- Beets - 4 (small)
- Raw cashews - ⅔ cup
- Coconut milk - 1 cup
- Nutritional yeast - 2 tbsp
- Garlic - 2 cloves (large)
- Lemon zest - of 2 lemons
- Lemon juice - 2 tbsp
- Salt - to taste

- Blender - 1
- Large pot - 1
Instructions
- Set oven to 400°F and bake beets for 1 hour.
- Start boiling water for pasta in large pot, add pasta when boiling.
- Drain pasta when done.
- When the beets are done, let cool and peel.
- Add beets, cashews, coconut milk, nutritional yeast, lemon zest, lemon juice, and salt to blender. Blend until smooth.
- Add contents of blender to large pot and cook down for a few minutes.
- Add pasta to large pot and toss to coat.
