  1. Set oven to 400°F and bake beets for 1 hour.
  2. Start boiling water for pasta in large pot, add pasta when boiling.
  3. Drain pasta when done.
  4. When the beets are done, let cool and peel.
  5. Add beets, cashews, coconut milk, nutritional yeast, lemon zest, lemon juice, and salt to blender. Blend until smooth.
  6. Add contents of blender to large pot and cook down for a few minutes.
  7. Add pasta to large pot and toss to coat.
