Makes enough to cover one cookie sheet
Ingredients
- Sweet potatoes - 1 (large)
- Cauliflower - ½ head
- Chickpeas - 1 can
- Garlic powder - ⅛ tsp
- Ginger powder - ¼ tsp
- Paprika - 1 tsp
- Cumin - 1 tsp
- Chili powder - ½ tsp
- Canola oil - 2 tbsp
Cookware
- Large mixing bowl - 1
- Small bowl - 1
- Colander - 1
- Cookie sheet - 1
- Parchment paper - enough to cover cookie sheet
Instructions
- Preheat oven to 425°F;
- Add garlic powder, ginger powder, paprika, cumin, and chili powder to small bowl. Mix.
- Chop sweet potatoes (½inch cubes) and cauliflower.
- Open can of chickpeas. Strain with colander.
- Toss sweet potato, spice mix, and canola oil in large mixing bowl. Transfer to cookie sheet line with parchment paper.
- Repeat with cauliflower and then with chickpeas.
- Bake for 40 mins, flipping at 20 mins.
