Makes 12 mini pizzas

Ingredients

• English muffins - 1 package (6 English muffins)
• Pizza sauce - approx. 1 cup
• Shredded cheese mix - approx. 2 cups
• Olive oil - approx. 2 tbsp

Cookware

• Cookie sheet - 1
• Pastry brush - 1
• Parchment paper - enough to cover cookie sheet

Instructions

1. Preheat oven to 400°F.
2. Spread parchment paper over cookie sheet.
3. Cut the english muffins in half. Place cut-side up on cookie sheet.
4. Brush olive oil onto English muffin halves.
5. Put cookie sheet in oven, bake for 10 minutes.
6. Remove cookie sheet from oven (English muffin halves should have started to crisp up, so they can pizza sauce without getting soggy).
7. Add pizza sauce onto English muffin halves.
8. Add cheese mix onto English muffin halves.
9. Put cookie sheet back in oven, bake for 8 minutes.
