  1. Add 11 oz water, 1 tbsp yeast, and ¼ tsp salt to the large bowl. Stir until dissolved.
  2. Add 1 ½ cups of all purpose flour to the large bowl. Whisk until incorporated.
  3. Add 1 tsp olive oil to the large bowl. Whisk until incorporated.
  4. Add 1 ¼ cups of all purpose flour to the large bowl. Whisk until incorporated.
  5. Add ¼ cups of all purpose flour to the large bowl. Whisk until incorporated. Repeat until dough is desired texture.
  6. Transfer dough to a flat, floured surface. Knead approx. 10 times.
  7. Split dough into 3 similarly sized pieces.
  8. Take 1 piece of dough, cloak, shape into a ball, and place on oiled cookie sheet. Repeat with 2 other pieces.
  9. Cover the cookie sheet in plastic food wrap.
  10. Allow to rise for approx. 2 hours.
